Easter Egg Salad
It’s our tradition to use hard-boiled eggs for decorating for Easter, and then we use them a day or so later to make egg salad. It’s a nice way to make sure the eggs don’t hang around too long, and we get to enjoy a once-a-year treat (the recipe I use is delicious, but it doesn’t get much unhealthier than all those eggs, mayonnaise, and bacon!) Happy Easter! We sure had an amazing Easter this year. We started off the day with a breakfast of red velvet pancakes! Yum. Today started our long weekend together at home for Easter break.
