Time to say goodbye to the colored eggs! Easter Monday means it’s egg salad time at our house. 😉 I only make it once a year, and my recipe features quite a bit of crumbled bacon, so it’s a rare treat around here. The kids helped me shell the eggs and mix things up this year, so even though they were a little sad at first to let them go, they had fun creating the egg salad. (No pictures of the result, unfortunately, once my hands got dirty, the phone stayed in my pocket!)

Grandma makes egg salad about once a month. Chickens in the backyard lay enough eggs that we have to use them up.
