Easter Egg Salad
It’s our tradition to use hard-boiled eggs for decorating for Easter, and then we use them a day or so later to make egg salad. It’s a nice way to make sure the eggs don’t hang around too long, and we get to enjoy a once-a-year treat (the recipe I use is delicious, but it doesn’t get much unhealthier than all those eggs, mayonnaise, and bacon!)
