Happy New Year! We spent our day mostly just playing at home. The kids enjoyed all their toys, and spent a good amount of time creating treats out of Play-Doh. Since Brandon’s family tradition is to have lemon fluff on New Year’s, I thought I’d try my hand at creating it myself this year. I found a recipe online, and even though Brandon said it wasn’t exactly right (too fancy, he said–this one called for fresh-squeezed lemon juice and grated lemon zest!) I thought I’d just try it anyway, since it seemed pretty close. Hey, extra vitamin C, if nothing else, right? In any case, I thought it turned out great, and the kids enjoyed it, too! They wanted to decorate theirs with colorful sprinkles, and although we tried to talk them out of it, they just insisted. Brian had been begging the whole vacation to go to Subway, and although it isn’t one of our favorite places, we gave in, just for him. He was so excited, saying that his dream had come true. The staff was so nice, and gave the kids free cookies, and got a fresh batch of soup just for us. Brian says he wants to have Subway catering at his birthday party! (Update 8/28/14: Our neighborhood Subway has closed unexpectedly! I guess it’ll be Chik-Fil-A again.) We picked up this cute raccoon canvas bin to put Brian’s soft toys in–Kendall liked it so much, we might have to get her the cute fox one to go with it! Brian wanted to put his new quilt on the bed, so we made it up nicely for him. You can see some of his books strewn on the bed. Brian loves Elephant and Piggie books right now, and Miss Jennie got him one for Christmas! Brandon does such an awesome job with their voices, it’s fun to overhear him reading those. 🙂 Finally, I got myself a little present–this Star Wars charm bracelet. Both nerdy, and cool. 😉 We’re back at school and work tomorrow–can’t believe our winter break is over already, but it was a good one!

I looked up a lemon dessert in a Sauk City church cookbook. Sauk City is not far from DeForest and sometimes recipes are regional. Maybe this is it, as it has the staples of Wisconsin pot-lucks: lemon pudding and Cool Whip. Brandon maybe able to tell just by the ingredient list. If this is not it, I have a recipe for Lemon Sponge from the same cookbook.
Lemon Dessert
1 cup flour
1/2 cup butter
1/2 cup nuts
1 cup Cool Whip
1 cup powdered sugar
8 oz.cream cheese
2 pkgs. instant lemon pudding
3 cups of milk
Mix flour, butter and nuts. Press into a 9 by 13″ pan and bake 15 minutes at 350 degrees. Mix cream cheese and powdered sugar until smooth, add Cool Whip, mix and put on cooled crust. Beat pudding and milk. Put over cream cheese layer. Top with whipped cream (remainder of Cool Whip container?) May use any flavor pudding.
